Gyümölcstorta házi vaníiapudinggal

Azonnali felhasználásra várt 1 doboz kiwi. Gyümölcstortán kívül nem igen tudtam mást elképzelni belőle, úgyhogy nemes egyszerűséggel egy sima piskótás-pudingos gyümölcstorta lett belőle. Na de házi vaníliapudinggal :)


Hozzávalók:
Piskótához:
4 tojás
80 gr liszt
80 gr cukor

Pudinghoz:
4 dl tej
2 tojássárgája
50-60 gr cukor
35-40 gr étkezési keményítő
2 tk. vanília esszencia
( vagy igazi vanília vagy van. cukor)

5-6 db érett kiwi


Elkészítés:
1. A sütőt előmelegítjük 160 fokra, egy 23 cm-es kapcsos tortaforma alját kibéleljük sütőpapírral, oldalát picit kivajazzuk.
2. A tojások fehérjét a cukorral nem túl kemény habbá verjük, a sárgáját fehéredésig habosítjuk.
3. A fehérjét hozzákeverjük a sárgájához, beleszitáljuk a lisztet és néhány határozott mozdulattal elkeverjük.
4. Belesimítjuk a tepsibe és előmelegített sütőben, az alsó rácson kb. 20 perc alatt készre sütjük. Ha kihűlt, lehúzzuk a papírt az aljáról, visszatesszük a formába.
5. A pudinghoz a tojások sárgáját a cukorral, keményítővel, vaníliával és pici tejjel habosra keverünk.
6. A maradék tejet felforraljuk majd hozzácsurgatjuk a tojásos masszát és közepes lángon, állandó keverés mellett, hogy le ne égjen vagy be ne rántottásodjon, puding sűrűségűre főzzük.
7. Ráöntjük az előzőleg elkészített piskótára, kiwi karikákkal díszítjük.
8. Miután megkötött a puding, lecsatoljuk a karikát és már fogyaszthatjuk is.

Fruit cake with home-made vanilla cream
Forget about the vanilla cream powder ( in my country is called "puding", you can buy any flavour of it, just need to add sugar and milk and bring it to the boil. Actually this powder contains cornflour. So does my vanilla cream but no artificial flavourings.) and make your own in 5 minutes!
Now I will also give you my sponge recipe which is very easy and the best sponge I have ever eaten. For the recipe thanks to one of my favourite Hungarian bakers, Vilmos.

Ingredients:
makes 23 cm diameter cake

For the sponge:
4 eggs, separated
80g plain flour
80g sugar

For the vanilla cream:
400ml milk
2 egg yolks
50-60g sugar
35-40g cornflour
2tsp vanilla extract

5-6 kiwis on the top

Method:
1.Preheat the oven to 160 celcius and line a cake tin with greaseproof paper. (Only the bottom , if you put paper on the sides as well, the sponge can not rise.)
2. Separate the eggs: in a freestanding electric mixer whisk the egg whites and set aside. Do not have to be hard.
3. Mix the egg yolks and sugar until pale and fluffy and then carfully fold the egg whites and the flour in. Do not overmix it otherwise the sponge will not rise. In preheated oven bake in 20 mins. As soon as it is cool, remove the paper from the bottom.
4. For the custard in a freestanding electric mixer mix the eggyolks, sugar, vanilla, cornflour and 1-2 tablespoons of milk until pale and fluffy. 
5. Place the rest of the milk in a sauce pan and bring it to the boil. Once the milk has boiled, remove it from the heat and pour the egg mixture in it. Return to the heat and whisk constantly for another 3-4 mins, When the mixture gets thick, it is ready.
6. Pour the cream over the sponge and decorate with kiwi slices.

You do not have to wait long to eat this cake as this kind of cream gets set kind of fast. Maximum of an hour and the cake is ready to eat.:)
